• 1 small shallot, finely chopped
  • 2 tbsp lime or lemon juice
  • 1 tbsp raw apple cider vinegar
  • 1 tsp Dijon mustard
  • 1 tsp honey mustard or raw honey
  • 6 tbsp extra virgin olive oil
  • Salt and freshly ground black pepper
  • 2 tbsp finely chopped fresh herbs, such as parsley, mint, basil, oregano, dill, coriander, chives, etc.

Shake all the above ingredients, apart from fresh herbs, in a lidded jar. Add the fresh herbs, gently mix and season to taste.
