- 1 small shallot, finely chopped
- 2 tbsp lime or lemon juice
- 1 tbsp raw apple cider vinegar
- 1 tsp Dijon mustard
- 1 tsp honey mustard or raw honey
- 6 tbsp extra virgin olive oil
- Salt and freshly ground black pepper
- 2 tbsp finely chopped fresh herbs, such as parsley, mint, basil, oregano, dill, coriander, chives, etc.
Shake all the above ingredients, apart from fresh herbs, in a lidded jar. Add the fresh herbs, gently mix and season to taste.
